Sweet Potato and Corn Chowder

Ingredients

  • 1 lb. sausage
  • 1-2 sweet potatoes
  • 1-2 golden potatoes
  • 1 can sweet yellow corn
  • 1 can sweet white corn
  • 1/2 yellow onion
  • 1-2 cups heavy cream
  • 5 cups water
  • 1/2 tsp garlic salt
  • 1 tsp. black pepper
  • 1 bunch green onions

Directions

Brown the sausage in a large soup pot. While the sausage is browning, peel the sweet potatoes. Chop all potatoes into bite sized pieces and dice the onion. When the sausage is mostly browned, add the potatoes and onions and let them begin to soften. After a few stirs, add five cups of water.

Bring to a boil until the potatoes are fork tender. Meanwhile drain the corn.

Add the corn and heavy cream to the pot. Add garlic salt and black pepper. Bring to a boil, then reduce to a simmer for 5 minutes.

Top with fresh green onions and serve hot.

Serves four.
