
Ingredients
- 2-3 heirloom tomatoes
- 1 ball burrata
- 2 slices sourdough bread (I use Schar’s Sourdough which is gluten free and amazing!)
- 1 Tbsp. olive oil
- 1/2 tsp. garlic salt
- 3-4 sprigs fresh thyme
- salt and pepper to taste

Directions
Cut the sourdough into half inch cubes and toss in olive oil and garlic salt. Bake, toast, or sauté to make homemade croutons. I used my toaster oven and tossed them a couple of times to get an even crunch.
Wash and cube the tomatoes and place on a large plate or platter. Salt and pepper the tomatoes to taste. Tear a ball of burrata and place evenly amongst the tomatoes. Sprinkle on croutons and fresh thyme. Dig in!

Bacon or prosciutto would be wonderful additions to this salad. It’s quick and easy and has all the best flavors of summer.
**Serves 2 – but I ate this entire plate for dinner one evening last week and have zero regrets.
