- 1 box fettucine noodles
- 1 package chicken sausage (I used Trader Joe’s Garlic Herb Chicken Sausage)
- 1 can great white northern beans
- 1 can artichoke hearts
- 1 bag arugula
- 1 Tbsp. lemon pepper seasoning
- drizzle of vegetable oil
- salt for pasta water
Slice the sausage into bite sized pieces. In a large pot, drizzle oil and begin to brown the sausage. Drain the artichoke hearts and slice into quarters. Drain and rinse the beans. Add the artichokes and beans to sausage and heat through.
Boil water for the pasta and make it salty like the sea. Season the sausage, beans, and artichokes with half the lemon pepper seasoning and add arugula to the pot. Remove from heat and stir until the arugula just starts to wilt.
Boil pasta to package directions for al dente. Remove from pasta water straight into the pot with the sausage mixture. Add remaining lemon pepper seasoning and toss until well combined. Serve immediately.
