Cucumber Waffles

Ingredients and Directions
- 2 waffles (my new fave is Trader Joe’s gluten free!)
- as much cream cheese as your heart desires
- 16 slices of English cucumber
- Everything But The Bagel seasoning
- 1 soft boiled eggs
Bring a pot of water to a boil and drop in the egg(s) for 6 minutes. Remove to an icy water bath to cool, then peel. Toast the waffles. Slice the cucumber into thin discs. Top the waffle with your desired level of cream cheese…I’m a 2 Tbsp per waffle kind of gal. Place the cucumbers in a neat little circle, slice your egg in half, and top with Everything But The Bagel seasoning.
Prosciutto, Apple, Burrata Toast

Ingredients and Directions
- 2 pieces of bread
- 1 ball burrata
- 1/2 Honeycrisp apple
- 1-2 slices prosciutto
- black pepper
- fresh thyme
Toast the bread. Tear one ball of burrata in half and place on each piece of toast. Crack fresh pepper over the burrata. Slice a Honeycrisp apple into thin wedges, place on top of burrata. Layer prosciutto and sprinkle fresh thyme over the entire dish.
Cilbir (Turkish Eggs)

Ingredients and Directions
- 1/2 cup plain Greek yogurt
- 1-2 eggs
- 1/2 Tbsp. chili crisp
- 1/2 tsp. garlic
- pinch of salt
- fresh thyme
- 2 Tbsp. vinegar
- 4 cups water
- cheesy biscuits (Red Lobster has a gluten free mix for their cheddar bay biscuits and it absolutely SLAPS.)

While the egg(s) is poaching, chop the garlic and combine with the Greek yogurt. Spread on the bottom of a bowl and make plenty of swirly pockets. Drizzle your favorite chili oil, I used the chili crisp from Trader Joe’s. Place the poached egg(s) on top of the yogurt and break the yolk. Add a pinch of salt and fresh thyme.
I pretty much ate nothing but cream cheese eggo waffles for breakfast from 2005-2008.
