
Salad Ingredients
- 2 large sweet potatoes
- 1 tsp salt, 1 tsp turmeric, 3 Tbsp. harissa
- 2 bags, steamed edamame
- 2 cups shredded carrot
- 2 cups shredded red cabbage
- 1 can garbanzo beans
Dressing Ingredients
- 1 can coconut milk
- 1 Tbsp. curry powder
- 1 Tbsp. honey
- 1 Tbsp. sesame oil
- 1 tsp. salt

Directions
Peel and chop the sweet potato into centimeter cubes. Toss in salt, turmeric, and harissa. Spread on a foil lined cookie sheet and bake at 350 for 45 minutes. Toss every 15 minutes. Let cool.
Steam the edamame, shred the cabbage, shred the carrots. Drain the garbanzo beans. Combine in a large bowl with the sweet potatoes.
Combine ingredients for the dressing and mix until smooth. Dress the salad and enjoy!
