Italian Sausage and Bean Soup


  • 1 lb. mild sausage
  • 1 lb. spicy sausage
  • 2 cans white beans
  • 1 can stewed tomatoes
  • 1 bunch kale
  • 3 carrots
  • 2 celery stalks
  • 1 white onion
  • 1 Tbsp. tomato paste
  • 1 1/2 Tbsp. Italian seasoning
  • 1 tsp. salt (to taste)
  • 4 cups vegetable broth
  • 2 cups water
  • drizzle of olive oil


In a large soup pot add the olive oil and mirepoix (chopped carrots, celery, and onion). Strip the skins from the sausages and add to the pot.

Break up and stir until brown. Measure a tablespoon of Italian seasoning and stir to combine.

Add the can of tomatoes and tomato paste. Add the vegetable broth and water. Stir until incorporated and bring to a soft boil. Taste for seasoning and add the kale.

Remove from heat and stir until kale is wilted.
