Brunch Game Strong – Episode 8

Mozzarella, Prosciutto, Arugula Toast

Ingredients and Directions

  • 1 piece of bread
  • handful of arugula
  • 2 pieces proscuitto
  • 5-6 balls of mini mozzarella
  • 1/2 Tbsp. salted butter
  • drizzle of olive oil
  • drizzle of spicy honey
  • fresh thyme
  • salt and pepper to taste

Melt the butter and olive oil in a pan and toast the bread. Pile on arugula and add a pinch of salt. Tear the prosciutto into bite sized pieces and layer onto the arugula. Tear the mozzarella balls in half and add on top. Sprinkle with salt and pepper. Finish with a drizzle of spicy honey and fresh thyme.

Raspberry and Cottage Cheese Waffles

Ingredients and Directions

  • 2 waffles
  • 1 cup cottage cheese
  • 1 tsp. sugar
  • handful of fresh raspberries
  • fresh thyme
  • black pepper

Toast the waffles. Mix the sugar into the cottage cheese. Top the waffles with cottage cheese and fresh raspberries. Finish with fresh cracked black pepper and fresh thyme.

Lemon Hummus Avocado Toast and Soft Boiled Eggs

Ingredients and Directions

  • 1 slice of sourdough bread
  • 2-3 Tbsp. lemon hummus
  • 1/2 avocado
  • 1-2 eggs
  • sliced purple onion
  • lemon zest
  • fresh thyme
  • salt and pepper

Bring 3 inches of water to a rolling boil. Place your egg(s) in, turn the heat to medium, cover, and set a timer for 6 minutes. Toast the bread and top with lemon hummus, sliced avocado, salt, pepper, and sliced onion.

When your six-minute timer goes off, immediately remove your eggs and place in a bowl of ice water for one minute. Crack and gently peel the eggs. The whites will be perfectly cooked and the yolk will be deliciously runny. Sprinkle the eggs with a pinch of salt. Zest a lemon and sprinkle fresh thyme over the entire plate.

Salmon Dip and Cucumber Bagels

Ingredients and Directions

  • 1 bagel
  • 2-3 Tbsp. salmon dip – I used Trader Joe’s Smoked Salmon Dip
  • 2 Tbsp. cream cheese
  • sliced English cucumber
  • lemon zest
  • salt and pepper

Toast the bagel halves. Spread salmon dip on one bagel half. On the other, spread cream cheese. Slice the cucumber and place on the cream cheese bagel. Zest a lemon and top with salt and pepper to taste.

**Great to put together and eat as a bagel sandwich if you’re on the go!
