Fresh Spring Rolls

with Cashew Butter Dipping Sauce

Spring Roll Ingredients
  • 1 lb. cooked shrimp (peeled and deveined)
  • 1 head radicchio (or purple cabbage)
  • 6-8 radishes julienned
  • 1 large carrot shredded
  • 1 bunch green onions
  • 1 can bean sprouts
  • 1 bag fresh spinach
  • 1 bunch fresh basil and/or mint
  • 1 package rice paper (I used the Dynasty brand)
  • water
Cashew Butter Dipping Sauce Ingredients
  • 1/2 cup cashew butter (I prefer Trader Joe’s)
  • 1 1/2 tsp. minced garlic
  • 1 Tbsp. tamari or gluten free soy sauce
  • 1 Tbsp. maple syrup
  • 1 Tbsp. lemon juice (lime juice works too)
  • 1 pinch red pepper flakes
  • hot water (to thin to your preference)
Directions

Chop and place all ingredients into separate bowls. Combine all ingredients for the dipping sauce. In a large glass of water, rotate one piece of rice paper until wet. Don’t over soak the rice paper or it will just rip. A quick dip will do!

Layer all your favorite vegetables, do a half roll with the rice paper, then add your shrimp. Fold in edges (like a burrito), then roll the rest of the way to seal.

Dip in the cashew butter sauce and enjoy! This is a great family meal option as everyone can include or exclude the ingredients they want. Some other great filling options would be –

  • cooked ramen noodles
  • cooked rice
  • tofu
  • kimchi
  • avocado
  • butter lettuce
  • cucumber
  • jalapeno or other chili
  • cilantro
  • shredded pork, chicken, or beef
  • fresh tuna
  • cooked salmon
  • water chesnuts
  • bell peppers

The options are truly endless! There are also more traditional peanut dipping sauces online, but that’s Death’s dipping sauce for me, so I went the cashew butter route.
