with Cashew Butter Dipping Sauce

Spring Roll Ingredients
- 1 lb. cooked shrimp (peeled and deveined)
- 1 head radicchio (or purple cabbage)
- 6-8 radishes julienned
- 1 large carrot shredded
- 1 bunch green onions
- 1 can bean sprouts
- 1 bag fresh spinach
- 1 bunch fresh basil and/or mint
- 1 package rice paper (I used the Dynasty brand)
- water
Cashew Butter Dipping Sauce Ingredients
- 1/2 cup cashew butter (I prefer Trader Joe’s)
- 1 1/2 tsp. minced garlic
- 1 Tbsp. tamari or gluten free soy sauce
- 1 Tbsp. maple syrup
- 1 Tbsp. lemon juice (lime juice works too)
- 1 pinch red pepper flakes
- hot water (to thin to your preference)

Directions
Chop and place all ingredients into separate bowls. Combine all ingredients for the dipping sauce. In a large glass of water, rotate one piece of rice paper until wet. Don’t over soak the rice paper or it will just rip. A quick dip will do!
Layer all your favorite vegetables, do a half roll with the rice paper, then add your shrimp. Fold in edges (like a burrito), then roll the rest of the way to seal.
Dip in the cashew butter sauce and enjoy! This is a great family meal option as everyone can include or exclude the ingredients they want. Some other great filling options would be –
- cooked ramen noodles
- cooked rice
- tofu
- kimchi
- avocado
- butter lettuce
- cucumber
- jalapeno or other chili
- cilantro
- shredded pork, chicken, or beef
- fresh tuna
- cooked salmon
- water chesnuts
- bell peppers
The options are truly endless! There are also more traditional peanut dipping sauces online, but that’s Death’s dipping sauce for me, so I went the cashew butter route.
