
Ingredients
- 1 1/2 – 2 cups marinara (use your favorite jar!)
- 1/2 cup fresh tomatoes (totally optional)
- 1 large clove garlic
- 2-4 eggs (however many you want!)
- 1 Tbsp. olive oil
- bread of your choosing
- salt and pepper to taste

Directions
Preheat oven to 350. Heat olive oil in a small, oven safe skillet. Chop any fresh tomatoes you have and mince the garlic. Sauté tomatoes and garlic in olive oil until fragrant – two or three minutes. Pour in marinara sauce and stir to combine. Bring to a simmer and allow flavors to meld for two to three minutes. Remove from heat and crack eggs into the sauce. Lightly salt the top of each egg.

Place in the preheated oven for 15-20 minutes. I check it frequently to make sure the white is cooked, but the yolk is still runny. Leave for the entire 20 minutes if you don’t like a runny yolk.
Watch your time and warm your bread of choice in the oven mid-way through. I chose Trader Joe’s gluten free, Brazilian cheesy bread…which gives me LIFE…and only takes 7-8 minutes to heat up in the oven.

Serve hot, and straight out of the pan if you’re like me. This is a perfect dinner for one or two, but could easily be made to feed a crowd on busy weeknights!
