Nectarine Salad

  • 1 nectarine
  • 1/2 cup cooked sausage
  • 2-4 oz. goat cheese
  • 2 cups arugula
  • drizzle of fig glaze
  • salt and pepper to taste

Brown sausage until it’s half crispy, then let cool. Slice the nectarine. Plate arugula, top with nectarine wedges, cooled sausage, and crumbled goat cheese.

Drizzle with fig glaze. This has a similar kick to it like balsamic, but not as vinegary. Finish with a good crack of black pepper and a sprinkle of salt.

***Serves one as a meal or two as a side salad.
