Mediterranean Bean Salad

  • 1 can cannellini beans
  • 1 can dark kidney beans
  • 1 can garbanzo beans
  • 1/2 purple onion
  • 3 English cucumbers
  • 1 1/2 cup cherry tomatoes
  • 8 oz. feta
  • 8 oz. salami
  • 2 cup green onions
  • 1 bunch fresh parsley
  • ***Optional*** olives and teardrop peppers would be delicious additions to this salad!!
For Dressing
  • 1/2 cup olive oil
  • zest and juice of one lemon
  • 1 1/2 Tbsp. red wine vinegar
  • salt and pepper to taste

Drain and rinse kidney beans, cannellini beans, and garbanzo beans. Chop all other ingredients. Make sure you start with a LARGE bowl. I had to switch half way through!

Stir everything together until evenly combined. Whisk together dressing ingredients. Toss into salad and let marinate for at least 10 minutes before serving.
