Leftover Thanksgiving Muffins

  • 4 cups leftover stuffing/dressing
  • 1-2 cups leftover turkey – chopped
  • 1/2 cup chicken stock/broth
  • 1 egg
  • salt and pepper to taste
  • OPTIONAL – You could also mix in a cup of mashed potatoes, add some green beans, fried onions, etc. Make them your own!

Combine all ingredients. You want the mixture to be fairly wet, slightly drier than a cornbread batter, so you may need more or less chicken stock/broth. Oil a muffin tin and spoon the mixture in evenly.

Bake at 350 for 30-35 minutes until golden on top.

Wine Pairing Suggestion

Mostly champagne mimosas.
