Spinach Bombs

My most requested recipe to date!


  • 1 12 oz. package of frozen spinach – thawed and squeezed of excess liquid
  • 1 cup almond flour
  • 1/2 cup corn meal
  • 1/4 cup breadcrumbs (I prefer gluten free)
  • 1 Tbsp fresh thyme
  • 1 tsp dried parsley
  • 1 tsp salt
  • 1/2 tsp white pepper
  • 1 cup shredded sharp cheddar
  • 1/4 cup parmesan
  • 3 eggs – whisked

Combine all ingredients and roll into bite sized balls. TIP – spray some cooking spray on your hands to prevent sticking.

Place on foil lined baking sheet – sprayed with cooking spray – and bake at 350 for 25-30 minutes.

Serving Tip – Great right out of the oven, but especially delicious cold and dipped in hummus.
