Burrata with Radishes and Toast

Ingredients and Directions
  • 2 pieces of toast (I used Trader Joe’s gluten free whole grain bread)
  • 1 ball of burrata
  • 5 radishes
  • small handful of clover sprouts
  • 1 green onion
  • zest of a lemon
  • drizzle of olive oil
  • fresh cracked pepper
  • salt
  • butter

In a skillet melt the butter and toast both sides of the bread. Plate the toast, then break the burrata in half. Tuck in a handful of clover sprouts (broccoli sprouts would be delicious as well). Wash and half the radishes. Chop the green onion and sprinkle on top. Zest one lemon over everything. Finish with a drizzle of olive oil, a sprinkle of salt, and fresh cracked pepper.

Egg and Avocado Bagel

Ingredients and Directions
  • 1 bagel (I used Trader Joe’s gluten free plain bagel)
  • 1/2 an avocado
  • 2 eggs
  • 2 Tbsp. cream cheese
  • salt and pepper
  • hot sauce

Half and toast the bagel. In a skillet, scramble the egg and season with salt and pepper. (Add some shredded cheese if you’re fancy.) Schmear cream cheese on the bottom half of the bagel. Smash the avocado on top of the cream cheese and salt lightly. Top with scrambled eggs. Cut in half and dip in your favorite hot sauce.

Avocado and Radish Toast

Ingredients and Directions

  • 2 pieces of toast (I used Trader Joe’s gluten free whole grain bread)
  • 1 small avocado
  • 2 large radishes
  • 1/2 Tbsp. mayonnaise
  • lemon juice
  • salt
  • Tajin

Toast the bread. Mash the avocado and mix with mayo, lemon juice, salt and pepper. Spread avocado mixture on toast. Thinly slice radishes and place on top of avocado. Sprinkle with Tajin.
