Pomegranate Salad

  • 1 bunch fresh spinach
  • 1 small head broccoli
  • seeds of half a pomegranate (about 1/2 to 3/4 a cup)
  • 1/2 cup green onions
  • 4 oz. goat cheese
Dressing (Drizzle) Ingredients
  • 1 Tbsp. honey
  • 1 Tbsp. olive oil
  • 1/4 tsp. salt
  • 1/2 tsp. black pepper

Rinse spinach and broccoli. Place spinach on a large platter. Dice broccoli into bite sized pieces and place on top of the spinach. Wash and cut the green onions and sprinkle evenly. Drizzle half the olive oil, half the honey, and sprinkle half the salt on at this point. Pinch off pieces of goat cheese and disperse evenly. Top with pomegranate seeds. Add remainder of olive oil, honey, salt, and pepper. Enjoy!
