The easiest, and most delicious “baked” potatoes are made in your crock pot! These work well for sweet potatoes or russet potatoes.
- Sweet potatoes – halved
- Olive oil
- Curry powder (Optional! – Any seasoning would work. These would be delicious for holidays with cinnamon, brown sugar, allspice, etc.)
Wash the potatoes and trim any questionable ends or spots. Slice potatoes in half, lengthwise. Tear two pieces of aluminum foil per potato half. Drizzle olive oil and sprinkle salt and curry powder onto a potato sized spot on the foil. Place the potato, sliced side down on the foil, then top with another drizzle of olive oil, more salt and curry powder.
Wrap tightly in aluminum foil, alternating directions of wrapping between the two pieces of foil. This helps keep all the moisture inside. Place in your crock pot, on high, for 4-5 hours. I also normally rotate them half way through to make sure they cook evenly, but my crock pot is older than I am.
