- 4 cups dry rice – prepared to package directions – today I used Basmati rice, but any rice would work.
- 2 cups frozen spinach – defrosted – do NOT drain
- 3 cloves garlic – roughly chopped
- 1 1/2 cups parmesan cheese
- 1/2 tsp Nature’s Seasons
- 2 tsp salt
Prepare rice to package directions. Make sure to salt your water well. This will assist in seasoning the overall dish. Defrost spinach and blend with roughly chopped garlic and Nature’s seasoning. You may need to add a splash of water to the spinach. Blend until smooth.
Combine cooked rice, spinach blend, and parmesan. Mix well, let set, mix again. You may want a touch more seasoning, so make sure you taste it!

***Specifically for meal prep – serves 2 for 5-6 days. If I was making this as a side dish for a family meal, I would cut the recipe in half for a family of 4-6.
