Baked Eggs with Sausage, Spinach, and Cheese

Ingredients and Directions
  • 4 eggs
  • 1/2 cup cooked breakfast sausage
  • 1 cup shredded cheese – I used Unexpected Cheddar
  • 1/2 cup heavy whipping cream
  • 1 Tbsp. frozen spinach, thawed
  • salt and pepper to taste
  • butter
  • pinch of oregano

Preheat oven to 375 degrees. Brown the sausage until crispy and set aside. Butter two ramekins. Whip two eggs with cream and spinach, salt and pepper, and add even amounts to the ramekins. Sprinkle half the cheese and sausage between the two ramekins. Add the second egg on top and keep whole. Salt and pepper and add remaining cheese and sausage.

Bake for 15-20 minutes until set. Serve with toast, biscuits, or cornbread.

***Serves two.

Breakfast Potato Bake

Ingredients and Directions
  • 4 russet potatoes
  • 1 cup frozen spinach, thawed
  • 1 lb. bacon
  • 1 cup shredded cheese – I used a colby jack blend
  • 1 cup heavy cream
  • 1 1/2 tsp garlic salt
  • 1 tsp black pepper

Wash and chop potatoes into 1/2 inch cubes. Cut one pound of bacon and fry. Thaw spinach a wring out excess liquid. Combine all ingredients in a 9×13 pan. Cover and bake at 350 for 30 minutes. Remove foil and bake an additional 10 minutes. Broil for 5 more minutes until golden. Let rest for 15 minutes before serving.

***Serves 6-8

Ricotta Grits

Ingredients and Directions
  • 1 cup grits
  • 1 1/4 cup water
  • 1/2 cup heavy whipping cream
  • 1/2 cup ricotta
  • 1/4 cup parmesan
  • 2 Tbsp. butter
  • salt and pepper to taste
  • 1 egg
  • bacon bits
  • green onions

Cook grits to container directions. Keep on low heat and add butter and ricotta. Add parmesan and cream, salt and pepper and stir until silky. Pour into your serving bowl. Fry your egg and place on top. Finish with bacon bits, green onions, and lots of fresh cracked black pepper.

***Serves 1

Savory Pancakes

Ingredients and Directions

  • pancake mix (I use the King Arthur Gluten Free Pancake Mix)
  • bacon OR sausage
  • frozen spinach, thawed
  • shredded cheddar
  • green onions

Cook the bacon or sausage and set aside to drain. Prepare pancake mix to package directions…you can make 2 pancakes or 20, just adjust your additional ingredients. For the entire bag of pancake mix I use 1 cup of bacon, 1/2 cup of thawed spinach, 1/2 cup of green onions, and 1 cup of shredded cheese.

Mix all ingredients into the pancake mix and make pancakes as usual. These warm up beautifully and are great for meal prep. I serve them with boiled eggs.

***Serves however many you want!
