
Ingredients
- 2 lbs. chicken breakfast sausage (turkey or pork sausage would work too)
- 1 – 1.5 cups almond flour
- 1 cup cottage cheese
- 1 cup shredded cheese (I used the Unexpected Cheddar from Trader Joe’s)
- 1/2 cup frozen spinach
- 1 egg
- 1 tsp. black pepper

Directions
Preheat oven to 350 degrees. Defrost the frozen spinach and squeeze out any additional liquid. Set aside to cool. Remove sausage from casings and packaging. Combine all ingredients until evenly distributed, but not over mixed.

Create biscuit shapes and place on a parchment paper lined cooking sheet. This was sticky business. I tried using gloves, I tried using an ice cream scoop. Bare hands worked best…and it’s worth it in the end.
Bake at 350 for 40-45 minutes.

***Made 12 chicken breakfast biscuits. Impossible to eat just one.
