Shirred Eggs with Ham and Cheese

Ingredients

  • 2-3 slices of deli ham
  • 4 eggs
  • 1/2 cup brie
  • 1-1 1/2 cups heavy whipping cream
  • 1 Tbsp. parmesan
  • 1 tsp fresh thyme
  • butter
  • salt and pepper to taste
  • bread for dipping
  • water

Directions

Preheat oven to 350 degrees and put 4-6 cups of water on to boil. Thoroughly butter two ramekins and place in a deep casserole dish. Chop the ham and distribute evenly between the two ramekins.

Crack two eggs into each ramekin. Add even bits of brie to each dish and salt and pepper both.

Pour in heavy whipping cream, add fresh thyme leaves, and sprinkle parmesan on top of both. Place the ramekin lids on top. Pour boiling water in the casserole dish until the ramekins are 3/4 of the way submerged. Baked for 20 minutes.

Carefully plate and serve with spears of bread. I used an onion loaf from Trader Joe’s.
