Prosciutto Wrapped Melon with Cheese

Ingredients and Directions

  • 3 slices of a Galia melon (honeydew or cantaloupe would work too)
  • 3 slices of prosciutto
  • 2 wedges Laughing Cow Cheese (any soft cheese – brie, port wine, etc. would work too)
  • cracked black pepper

Spread the cheese into swirls on the bottom of your bowl. Slice melon into wedges and wrap in prosciutto. Finish with fresh cracked black pepper.

Nutty Avocado Toast

Ingredients and Directions

  • 2 slices of bread of your choosing (I used a baguette for this…not gluten free…no regrets)
  • 1 avocado
  • 1 Tbsp lemon juice
  • 2 Tbsp chopped pistachios
  • 2 Tbsp chopped macadamia nuts
  • 2 Tbsp chopped marcona almonds
  • zest of a lemon
  • drizzle of spicy honey
  • salt to taste

Toast the bread. Smash the avocado with lemon juice and a pinch of salt. Roughly chop all the nuts and mix together. Layer avocado onto the toast, then top with the nutty mixture. Drizzle with spicy honey and finish with zesting a lemon on top.

Tomato, Avocado, Jamon Serrano, Egg Bowl

Ingredients and Directions

  • 3 slices heirloom tomato
  • 1/2 an avocado
  • 3 slices jamon serrano (this is just Spanish prosciutto – it’s denser and a bit saltier)
  • 2 eggs
  • 2 pieces bread of your choosing
  • squeeze of lemon
  • fresh thyme
  • 1 tsp salt butter
  • water and vinegar (for easy egg poaching – https://withaglassofwine.com/2020/09/26/low-stress-poached-eggs/ )
  • salt to taste

Melt the butter in a nonstick pan and toast the bread. Cut into squares. Drop one square on the floor for your dog. (This is a very important step.) Cut thick slices off an heirloom tomato and lightly salt each layer. Cut the avocado in half, peel the skin off the outside, and slice evenly. Squeeze lemon juice and sprinkle a pinch of salt on the avocado. Fold slices of the jamon serrano like ribbons for visual flare. Poach two eggs in water and vinegar. Plate everything and top with a ton of fresh thyme.

Jammy Egg and Radish Toast

Ingredients and Directions

  • 2 pieces bread of your choosing
  • 2 eggs
  • 2 large radishes
  • 3 slices red onion
  • 3 large fresh basil leaves
  • 2 Tbsp sour cream
  • 1/3 cup feta
  • squeeze of lemon
  • salt to taste

Bring a pot of water to a rolling boil. Add the eggs and set a timer for 7 minutes. Immediately remove the eggs to an ice water bath to cool. Toast the bread and top with a spread of sour cream. Wash and chop the radishes into wedges, peel and cut the eggs in half, and slice the onion. Roll the basil leaves together and cut into ribbons. Place the radishes, eggs, and onions on the toast. Squeeze a lemon wedge over the entire dish, lightly salt to taste, and finish with feta and ribbons of basil.
